Whole30 Straw Mushrooms and Beef Stir-fry

Straw mushrooms and Asian-style marinated beef are stir-fried together in this delicious and easy recipe. All of the ingredients used in this recipe are also Whole30 and Paleo compliant and a low carb meal option (simply omit serving it with rice). A great beef stir fry recipe that is much healthier than any takeout option!

Who doesn’t love an easy stir fry recipe? Once the beef has marinated, you can whip this recipe up in no time. It is perfect for a busy weeknight meal! 

 

Key features and tips

Canned straw mushrooms – We are using straw mushrooms in the can in this recipe. We love how easy it is to be able to simply drain and use these mushrooms in any recipe. If you are watching sodium intake, or if you prefer to use fresh mushrooms then feel free to swap out the canned mushrooms. We haven’t tested the recipe using fresh mushrooms though. We’d suggest slightly pre-cooking the mushrooms a bit since canned mushrooms are softer and basically ready to eat right out of the can.

Whole30 and Paleo-compliant ingredients – We have made this recipe to be Whole30 and Paleo compliant by using coconut aminos instead of soy sauce. Simply omit the rice we have pictured. We also kept the marinade very simple using only a few ingredients. However, the flavor is still amazing! We’d recommend not swapping any of the ingredients for the marinade because coconut aminos have some natural sugar/sweetness. If you swapped it out for straight soy sauce, the recipe would probably turn out to be very salty with no added sweetness to it. If you absolutely want to swap out the coconut aminos for soy sauce, then we’d recommend making sure to add a bit of sugar to the marinade to help balance out the saltiness of the soy sauce. We haven’t tried this with this recipe though, so venture at your own risk.

Beef – We used thinly sliced beef, however, feel free to try another protein of your choice. You could substitute the beef out for chicken, pork, or tofu. If you are not opposed to beef though, we’d highly recommend you try it with beef as per our recipe.

How to make our Straw Mushroom and Beef Stir-fry

Step 1: Make the beef marinade and marinate for at least 1 hour

Let’s make the marinade. Mix the ingredients together listed to make the beef marinade in a medium-sized bowl (large enough to also hold the beef).

Add the beef to the marinade. Marinate the thinly sliced beef for about 1 hour. Note: The longer it marinates the more the flavors will infuse into the beef.

 

Step 2: Mix the potato starch and water

Mix the potato starch and the cold water in a small bowl. Set aside for later.

 

Step 3: Start stir-frying the beef

In a stir-fry pan, warm the pan up to medium-high heat. Once the pan is hot, add in the oil. 

Add the marinated beef to the pan and stir-fry until well done (about 10 minutes). 

 

Step 4: Add in the drained can of straw mushrooms

Next, add the drained can of straw mushrooms into the pan with the beef. Continue stir-frying for another 3 minutes. 

 

Step 5: Add the potato starch mixture and green onions

Add the potato starch water (you may need to give this a quick stir if the starch settled) and green onions to the frying pan. Continue to stir-fry everything together for about another 2 minutes.

 

Step 6: Serve and enjoy!

Serving suggestions
