This easy stir-fried rice noodle recipe is bursting with Asian flavors and delicious shrimp. This is a great option for any day of the week, and is way better for you than takeout!
This recipe is so easy to make. If you do a lot of Asian-style cooking at home, then you probably have all the ingredients needed for this recipe in your pantry already. If not, don’t worry! Most of the ingredients are fairly easy to find at most grocery stores or online.
Key features and tips
The most time-consuming part is stir-frying all of the vegetables separately since they all have varying cook times. This results in vegetables that aren’t mushy and still have the perfect texture. You could also adjust the cooking time to be longer or shorter depending on your preference of how done you like your veggies. So feel free to adjust the cook times to your preferred veggie doneness.
We used shrimp in this recipe, however, you can substitute it out for any protein you like. You could use chicken, beef, pork, or even tofu. Or you could even simply just load up on more vegetables instead for a meatless Monday-styled meal.
Ingredients needed to make this stir-fried noodle recipe
- Wide rice noodles
- Cabbage
- Carrots
- Green onions
- Celery rib
- Raw shrimp
- Salt
- Avocado oil
- Cilantro
For the stir-fry sauce:
- Fish sauce
- Seasoning sauce
- Soy sauce
- Ground black pepper
- Garlic powder
- Onion powder
- Sugar
- Red cooking wine
How to make our easy stir-fried rice noodles with shrimp
Step 1: Soak the rice noodles
Put the package of rice noodles in cold water. Make sure the water covers all of the noodles. Let it soak for 20 minutes.
Step 2: Prepare the stir-fry sauce
In a small bowl, mix everything together for the stir-fry sauce. Set aside.
Step 3: Time to stir-fry the shrimp and each vegetable separately
Place a frying pan on medium-high heat. Add a little bit of oil to the bottom of the pan. We are going to stir-fry all of the ingredients separately since they all have slightly different cooking times. First, we’ll stir-fry the shrimp until opaque and pink. Remove from the pan and set aside on a plate. (Note: You can set everything aside on the same plate in steps 3-6 to save dishes.)
In the same frying pan, add in a little more oil. Add in the sliced cabbage strips. Stir-fry for about 5 minutes and add in a pinch of salt. Remove from the pan and set aside.
Add a bit more oil to the bottom of the pan. Stir-fry the carrots for about 4 minutes and add in a pinch of salt. Remove from the pan and set aside.
Add a bit more oil to the bottom of the pan. Stir-fry the celery for 3 minutes and add in a pinch of salt. Remove from the pan and set aside.
Finally, add a bit more oil to the pan and add in the sliced green onions for 2 minutes. Remove from the pan and set aside.
Step 4: Drain and cut the noodles
After the noodles have soaked for 20 minutes, drain the noodles. With kitchen shears or a knife, cut the noodles so that they’re about 6 inches in length.
Step 5: Stir-fry the noodles
In the same frying pan you cooked the vegetables and shrimp on medium-high heat, add a bit of oil to the bottom of the pan. Add in the rice noodles and stir-fry for about 10 minutes.
Step 6: Add everything back into the pan with the noodles
Add all of the stir-fried vegetables and shrimp back into the frying pan with the noodles. Add the stir-fry sauce. Continue stir-frying everything together for about 3 minutes.
Step 7: Remove from heat and add cilantro (optional)
Remove the frying pan from heat. Add in the cilantro (if you’re using it), and give it a good mix. Serve and enjoy!

- 3 green onions, sliced on the diagonal
- 1 celery rib, thinly sliced on the diagonal
- 1 lb raw shrimp, peeled/cleaned/deveined
- 1 tsp salt
- 6 Tbsp avocado oil
- 2 Tbsp cilantro, finely chopped (optional)
For the stir-fry sauce:
- 1 Tbsp fish sauce
- 2 Tbsp seasoning sauce
- 2 Tbsp soy sauce
- ½ tsp ground black pepper
- 2 tsp garlic powder
- 1 tsp onion powder
- 2 tsp sugar
- 2 tsp red cooking wine
