Korean pork belly BBQ (samgyeopsal-gui) is a really simple and easy recipe. This is one of the more popular Korean BBQ options which consists of pan-fried sliced pork belly, fresh romaine lettuce leaves, sliced garlic, sesame oil, and gochujang. This recipe is also low carb and gluten-free (if you have a gluten-free gochujang).

It is so delicious and takes very little prep time or cook time. Which means it can be a perfect option for a quick and easy meal. We typically eat this Korean BBQ without rice, so it is also low carb! However, if you’re a fan of having rice in your Korean BBQ lettuce wraps, feel free to add freshly steamed rice to the meal. 

 

Traditionally, grilling the meat for Korean BBQ happens at the table, which makes this a great social or family-style meal. Even many Korean restaurants here in the United States offer Korean BBQ where you can grill it at the table yourself. The grill is usually in the middle of the table and the server will then bring you your selections of raw meat so that you can cook it yourself. It’s really a great experience! You can bring that experience inside your own home with our easy and delicious recipe!

 

There are different varieties of topping and vegetable options for Korean BBQ. Today, we are sharing with you how we like to serve Samgyeopsal-gui in our house. We love to use simple ingredients and toppings so that the pork belly really is the star of the dish. Sometimes simpler is better!

How to make grilled pork belly Korean BBQ style

Step 1: Prepare the vegetables and toppings

Rinse and clean the romaine lettuce (or green leaf lettuce) well. Drain well. Set aside for later.

Peel and slice garlic cloves as close to possible to paper-thin. Set aside. 

Place 1 tbsp of sesame oil into small sauce dishes for each person. Add ½ tsp of salt to the side of each dish with the sesame oil. Add ¼ tsp of ground black pepper on top of the sesame oil.

 

Step 2: Let’s cook the pork belly slices

If you have a portable burner where you can cook this pork belly tableside to make it more of an experience, then feel free to do that. However, you can also just cook the pork belly on the stove in a frying pan as well as we have done. Place a frying pan on medium-high heat. Cook the pork belly slices until well-done.

Step 3: How to serve and eat 

Take a piece of lettuce and cup it in your hand. Dip a piece of pork belly into the sesame oil mixture and place on top of the lettuce. Add a slice of garlic, a few shreds of the scallions, and as much gochujang as you prefer on top of the pork belly slice. Wrap it up and eat. Enjoy!

Ingredients

  • 2 lbs sliced pork belly (found in Korean/Asian market frozen meat section, cut into 2” pieces)
  • 2 heads of romaine lettuce (or you can use heads of green leaf lettuce)
  • 4 Tbsp Korean hot pepper paste (gochujang)**, for gluten-free option see Notes
  • 6 scallions, shredded/thinly sliced
  • 12 garlic cloves
  • 4 Tbsp sesame oil
  • 2 tsp salt
  • 1 tsp ground black pepper

Instructions

  1. Rinse and clean the romaine lettuce (or green leaf lettuce) well. Drain well. Set aside for later.

Notes

We have given you a very basic and traditional way of eating Korean Pork Belly BBQ (Samgyeopsal-gui). You can also add perilla leaves and/or sliced fresh green peppers (non-spicy) in your wraps as well.
