Ingredients You Need for This Recipe
All you need is a total of five ingredients. Yes, only FIVE ingredients. - 1 cup sweet rice powder
- ½ tsp salt
- 1 cup cold water
- 4 large Medjool dates, seed removed, finely chopped (about 3 Tbsp)
- 1 ½ tsp honey
How to Make Sweet Rice Cakes with Dates and Honey Filling
- First, let’s mix the sweet rice cake mixture. In a medium-sized bowl, add in the sweet rice powder, salt, and cold water. Mix together well.
- Next, prepare the date and honey filling. Combine the finely chopped dates and honey together in a small bowl. Mix it together well so the honey is mixed in with the chopped dates.
- Place a medium-sized pan on medium-high heat and cover the bottom of the pan with oil. Using a non-stick or cast iron that is well seasoned will be the best so that the rice cakes do not stick to the pan. Once the pan is hot, add in about ⅛ cup of the sweet rice powder mixture to the pan. Make it circular and spread it out evenly to a thin layer, just like you would a pancake.
- Add a bit of the dates and honey mixture off-center and on top of the sweet rice cake. Once the sweet rice cake has started to firm up and brown on the bottom, then fold it over like a taco, or roll it over itself. Either way you do it, you just want to make sure you create a seal to keep the date and honey filling inside.
- Keep repeating to make all the rice cakes. Add a bit more oil to the pan as you go to ensure the rice cakes do not stick to the pan. Enjoy!
