This potato soup is so incredibly easy to make. The flavor of this soup is very light and creates a nice blank slate to accompany other bolder flavors with it. It’s sometimes nice to have different levels of flavors to a meal. If every part of the meal is bold, salty, spicy, etc. then there is no room for cleansing the palate so to speak. This soup really balances out a meal perfectly. A light and refreshing potato soup that has a delicious light flavor profile that combines extremely well with bold side dishes or other main dishes.
Key features and tips
We are using anchovy soup stock powder in our recipe. We highly recommend using this if you can find it or order it online. If you absolutely can not find this item, you could also use a few whole dried anchovies instead in your soup stock. If you don’t have anchovies, you could add a couple of pieces of dried kombu seaweed to instill that umami flavor. We haven’t tested these substitutions out ourselves, but feel free to experiment if you’re having a hard time finding anchovy soup stock powder.
We slice the potatoes really thin so that it doesn’t take a long time to cook. By slicing the potatoes thinly, it also gives the soup a light feeling versus having big potato chunks as you would see in a hearty stew.
Ingredients needed for this easy potato soup recipe
- Russet potatoes
- Avocado oil
- Water
- Green onion
For the soup seasonings:
- Sesame oil
- Salt
- Fish sauce
- Anchovy soup seasoning powder
- Garlic clove
How to make this easy potato soup
Step 1: Mix together the seasonings
In a small bowl, mix together all of the ingredients to make the soup seasonings. Set aside for later.
Step 2: Stir fry the potatoes
In a medium-sized pot, add in the avocado oil on medium-high heat. Once the pot is hot, add in the sliced potatoes and stir-fry for about 5 minutes.
Step 3: Add the seasonings to the potatoes
Next, add in the seasonings and stir into the stir-fried potatoes.
Step 4: Add the water and boil
Add in the water. Allow it to come to a boil. Turn the heat down to medium heat. Let it continue cooking for about 10 minutes.
Step 5: Top with green onions
Top with thinly sliced green onions. Remove from heat and enjoy!

- 2 large russet potatoes (skin peeled, cut into thin half moon slices)
- 2 Tbsp avocado oil
- 4 cups water
- 1 green onion, thinly sliced
For the soup seasoning:
- 1 tsp sesame oil
- 1 tsp salt
- 2 tsp fish sauce
- 1 tsp Anchovy soup seasoning powder
- 1 garlic clove, minced
Instructions
- In a small bowl, mix together all of the ingredients to make the soup seasonings. Set aside for later.
