This spicy stir-fried pork belly recipe is so delicious and full of Korean flavors. We use a delicious and spicy homemade marinade that is incredibly easy to make.
This pork belly recipe is seriously so delicious and so easy. You really just let the marinade do most of the work. Simply prepare this the night before you want to cook it so it has the maximum amount of time to marinate overnight. It will be ready to cook the next day and will be so full of flavor.
Key features and tips
We like to prep the pork belly in a way that is ready to devour when it’s done cooking. So if your cut of pork belly meat has the skin still on it, remove the skin prior to marinating it. Sometimes when you purchase sliced pork belly at the Asian markets the meat may also have small pieces of hard cartilage, and we like to remove that prior to marinating as well. So that way when it is time to eat, you get the full bliss of melt-in-your-mouth pork belly.
Our marinade has a Korean red chili pepper powder (gochugaru) base. This gives this recipe a nice spicy kick with great Korean cuisine flavor. Due to the addition of a little sugar, we are able to create a nice caramelization on the marinated pork belly that is to die for. You will not be disappointed!
Ingredients needed to make this pork belly recipe
- Pork belly (sliced thin)
- Green onions
- Olive oil
- Toasted sesame seeds
For the marinade:
- Soy sauce
- Sesame oil
- Korean red chili pepper powder (gochugaru)
- Ground black pepper
- Sugar
- Salt
- White cooking wine
- Garlic cloves
- Ginger root
- Fish sauce
How to make our spicy stir-fried pork belly
Step 1: Make the marinade & marinate the pork belly
Mix all of the marinade ingredients together well in a large enough bowl to also accommodate the pork belly meat. Or you could also mix the marinade together in a ziplock bag. Add the pork belly meat to the marinade. Mix together the meat and marinade well to ensure that the marinade covers all of the pork meat. Refrigerate and let it marinate overnight.
Step 2: Cook the marinated pork belly
Heat up a pan on medium heat. Add the olive oil and once the pan is hot add the marinated pork meat. Depending on the size of your pan, you may need to cook this in batches.
Step 3: Continue cooking allowing it to caramelize
Once the pork is well done and no longer pink, turn the heat down to low. Cook for an additional 10 minutes and continue to stir to ensure it doesn’t burn. We want any excess liquid to start evaporating and for the pork belly to start caramelizing a bit.
Step 4: Stir in green onions and top with sesame seeds
After the 10 minutes, add in the sliced green onions and turn the heat off. Stir in the green onions. Top with toasted sesame seeds and enjoy!
Serving suggestions
We love to eat this spicy pork belly with freshly steamed rice. Or enjoy this pork belly wrapped in a green leaf or red leaf lettuce with a bit of Korean red pepper paste (gochujang) added on top of each wrap for a low carb option. So yummy!

- 3 green onions (1 ½” long sliced)
- 2 Tbsp olive oil
- 1 Tbsp toasted sesame seeds
For the marinade:
- 4 Tbsp soy sauce
- 2 Tbsp sesame oil
- 3 Tbsp Korean red chili pepper powder (gochugaru)
- 1 tsp ground black pepper
- 2 Tbsp sugar
- 1 tsp salt
- 1 Tbsp white cooking wine
- 3 garlic cloves, minced (1 Tbsp)
- 1 tsp ginger root, minced
- 1 tsp fish sauce
Instructions
