Galbi is just that one dish that is truly irresistible. Galbi (or Kalbi, 갈비), literally means ribs and Gui simply means a grilled dish. For friends or family who has never tried Korean cuisine before, I will always suggest trying bulgogi or galbi. If we are at a local Korean restaurant, or if I’m cooking for multiple people who I’m not sure if they’ve experienced Korean food before, bulgogi and galbi is always a safe bet.
Korean-style short ribs
The short ribs needed for this recipe are cut across the bone. This is also known as crosscut ribs or flanken short ribs. They’re a little harder to find, however, I have seen them at times at my local grocery store, such as Publix or Kroger. You should also be able to find this cut of meat at your local Asian market.
Galbi marinade
Our galbi marinade is simple and flavorful. We use common ingredients for our marinade that is easily accessible for most everyone. If anything, the hardest ingredient to find will be the flanken or crosscut short ribs. Our simple marinade is made with soy sauce, honey, sugar, sesame oil, garlic, salt, and black pepper.
Make this marinade gluten-free by simply switching the soy sauce out for a gluten-free option. Using Tamari sauce (like this one) instead of soy sauce is an easy way to make this recipe gluten-free but still have that soy sauce flavor.

- Cross-cut/flanken short ribs
- Soy sauce (or Tamari for gluten-free option)
- Salt
- Sesame oil
- Black pepper
- Honey
- Sugar (or substitute with honey)
- Garlic cloves
How to make Korean BBQ Short Ribs (LA Galbi Gui)
Step 1: Make the marinade
Mix the marinade ingredients together in a large enough bowl that will hold both the marinade and the short ribs.
Step 2: Marinate the short ribs
Add the short ribs to the marinade. Make sure to cover each piece of the beef ribs well in the marinade. Marinate in the refrigerator for about 24-30 hours. Marinating this long really ensures that the flavors soak into the short ribs.
Step 3: Cook on a charcoal grill
Heat up a charcoal grill to a hot/searing temperature. Sear both sides of the ribs. Then lower the temperature to low-to-medium heat, and continue to cook the ribs for 15-20 minutes until well done and the ribs are caramelized brown in color. Enjoy! (Note: You can also cook this on a hot cast iron pan if a grill is not available.)
